Chocolate Cupcakes with Peanut Butter and Chocolate Icing

Peanut Butter and chocolate cupcakesWhenever I think of peanuts, I then immediately think of chocolate! Following that thought process, I think … Reeses Peanut Butter Cups! Hmmm I wanted to try and incorporate the flavours of chocolate and peanuts into a cupcake and this is how it is done…

This is what you will need for the chocolate cupcakes;

–          200g Butter at room temperature

–          130g Plain Four

–          200g Caster Sugar

–          4 Free Range Eggs

–          70g Melted but cooled Dark Chocolate (over 75% Cocoa Solids)

–          1 ½ tsp Baking Powder

–          1 ½ tsp Bicarbonate of Soda

–          Pinch of Salt

Birthday Cake!

Recently, Jennifer’s Cakes was asked to create a birthday cake for a lovely little girl who was turning 10 years old.

Her Celebration took place on the beach in Estepona, Spain.

 

There were loads of children playing around on the beach and due to the amount of children, we were asked to create a number of cupcakes to match the birthday cake.

Happy Birthday Mummy – Chocolate Cupcakes with Beetroot

Beetroot CupcakesThis post is dedicated to my amazing mother who is celebrating her birthday today. Every time I see my mum, she asks for these cupcakes and now she will know my secrets to creating her favourite treat.

I know that beetroot is usually used in a savoury dish, however this is completely against the natural flavour of the beetroot which is sweet. When working with chocolate, I like to compliment the chocolate using additional flavours, such as salt or chilli or even beetroot. Chocolate and beetroot really works, it adds a quirky twist to a standard chocolate cupcake and also turns the mixture to a deep red colour.

Alcoholic Chocolate Cupcakes with Vanilla Rum and Raisin Butter Cream Icing

WOW! What a mouthful! As Jennifer’s Cakes is currently based in Spain for numerous fabulous beach weddings cRum and Raisin butter creamoming up, on my ‘one’ day off, I ventured into the quaint Spanish town of Estepona where I found the most amazing inspiration for some beautiful cupcakes which I thought I would share with all my blog readers. During my short stay in Estepona, I decided to have an ice cream as the weather is just so hot here and you guessed it, the flavour was ‘Rum and Raisin’, what a delicious flavour combination, so delicious in fact that I decided to turn it into two types of alcoholic cupcake, one being ‘Vanilla Rum and Raisin’ and the other being ‘Chocolate Rum and Raisin’, which blog post will follow shortly.

Dark Chocolate and Sea Salt Cupcakes

Sea salt and chocolate cupcakesWhen working with chocolate, bakers like to think of all the different flavour combinations that work well with chocolate. Chocolate and sea-salt happens to be a fundamental combination which ‘works’ every time.
